I was blessed to have received a good variety of flavors and styles of cookies that Walker's offers. The cookies that I received included Shortbread Fingers, Shortbread Rounds, Chocolate Chip Shortbread, Shortbread Highlanders, and the Scottish Cookie Assortment. They are all delicious, but I think my favorite is the Chocolate Chip Shortbread. There is something about the buttery flavor of the shortbread and the sweetness of the chocolate that I love!
Walker's not only makes cookies, but they also make crackers, called Oatcakes, that pair beautifully with both sharp and mild cheese, fresh fruit jam, sliced deli meats, honey, salmon and more. These would be wonderful to serve at a party!
When I first was contacted by Walker's to complete a review of their cookies, I notice that they have a recipe section on their website and I decided that I would try one of the recipes with some of the cookies that I was sent. Looking around at the recipes, the one that stood out for me was the Shortbread Tiramisu. I come from an Italian family and tiramisu has always been a favorite in our house so I thought trying a different spin on a classic recipe would be fun!
I did take pictures of mine, but I think this picture is so beautiful and mine, while they were extremely tasty, were not nice to look at. The tiramisu was very easy to make and the substitution of the shortbread for the more traditional lady fingers added a nice texture to the dessert. Typically the lady fingers get soggy and soft, but the shortbread held it's body while still absorbing the liquid and flavors. I would recommend visiting the Walker's Shortbread website and look through the recipes for ideas when planning your next dinner party.
